What we're eating this week ...

Sunday - Cajun Chicken Pasta, courtesy of the Pioneer Woman.  It was DELICIOUS.  Spicy chicken, bell peppers and onions with linguine in a light cream sauce.  Yum.  Yum.  Yum.  This recipe is definitely going in our recipe book.

Monday - Chicken Florentine Casserole.  J. found this recipe and was going to have it during "Bachelor Week," but he got so busy he didn't have time to make it.  The casserole had chicken breasts on a bed of spinach leaves and mushrooms, with a creamy white sauce and topped with mozzarella.  It too was delicious.  We used real bacon instead of bacon bits and next time, I would use fresh or frozen spinach instead of canned spinach.  But that's because I am afraid of canned things and canned spinach is GROSS in my opinion.  


Tuesday - Leftovers.  Normally, I don't eat leftovers.  I just don't like them.  But that's how good the Cajun Chicken Pasta was ... good enough to eat again!  


Wednesday - Pulled Pork Sandwiches.  I LOVE pulled pork sandwiches, but I've never tried to make my own.  I think this recipe looks amazing ... I will let you know how it goes! 


Thursday - Butter Chicken from the Tasty Kitchen.   I can't wait to try this one ... it caught my eye the first time I saw it.  I'll try to remember to do a review next week!  Overall, lots of chicken but all new and  exciting recipes!

  1. Yes. I posted about this one on our blog. With the yummy super fresh salmon you guys can get up there, you can't pass this one up. Followed the recipe exactly and then grilled over cedar planks.
